Quick and Easy Banana Pancakes

Save this recipe for your next Sunday brunch! These quick and easy banana pancakes are my favorite pancakes to make! With not a lot of effort, you can level up a breakfast staple that can get repetitive at times. These ones pass my test as they’re not gummy or overly fluffy.
These soft banana pancakes come together in two easy steps . They’re inspired by a classic buttermilk pancake, but I found that using yogurt makes the pancake even softer. You could replace the yogurt + water mixture with 1 cup buttermilk. As for the taste, they’re not too sweet, and the cinnamon complements the banana so well without being too potent. Make sure you use ripe and spotty bananas just like you would for banana bread.

Ingredients

1 medium-sized banana
1 egg
½ cup natural yogurt
1 cup(120g) flour
1 tsp baking powder
½ tsp cinnamon
½ tsp salt
2 tbsp sugar
1 tbsp oil

Instructions:

Mash the banana with a fork on a plate and set aside. In a bowl, mix the yogurt with ½ cup of lukewarm water. Mix until well incorporated. Add in the mashed banana, sugar, oil, and egg. Mix well until combined. In a separate bowl, mix all the dry ingredients together. Make a well in the center and add in the wet ingredients, mix until combined.

2. Heat up a pan and brush on some oil. Scoop the pancake batter, I used 2 heap tbsp per pancake (around ¼ cup), and slightly spread it out using the back of the spoon. After bubbles appear on top and the edges are brown, flip and cook until done.

Serve these warm banana pancakes with your favorite toppings. I topped it with peanut butter, banana slices, and hazelnut spread. Enjoy a perfect breakfast!
