Garlic and Herb Fries

Super simple yet delicious way to jazz up fries! With only a few additional ingredients, you can turn potatoes into a restaurant-quality side dish. Just make your fries like you normally would (I prefer to make them in the oven), and toss them with finely minced garlic and herb of choice (I went with parsley), salt and pepper, and some paprika. You can get creative with this and use different seasonings.

Typically I don’t peel the potatoes, but these ones in particular were going bad. Soaking the potatoes in ice water eliminates excess starch and allows them to get crispier in the oven. I served these fries with a creamy tahini sauce.

Garlic and Herb Fries

Prep time: 5 minutes

Cook time: 35 minutes

Serving: 1 portion

Ingredients

  • 4 small potatoes
  • 3 tbsp oil
  • Salt and pepper to taste 
  • 1 garlic clove
  • Small bunch of parsley leaves, around 2 tbsp when chopped. 
  • ½ tsp Paprika, optional

Instructions:

1. Wash the potatoes well, peeling is optional. Cut into lengthwise pieces. Fill a large bowl with ice water and toss in the potatoes. Put the bowl in the fridge and let them chill for 15-30 minutes.

2. Preheat the oven to 200C with your baking sheet in the oven. Drain the potatoes and rinse with water. Place them on clean towels to dry them. Once the oven is preheated, take it out with caution. Immediately drizzle 3 tbsp of oil or as much as you need on the hot baking sheet and toss in the potatoes. Sprinkle well with salt and pepper, as well as any additional seasoning that you’d like. Arrange them in a single layer so non of them overlap and bake in the oven for 30-35 minutes or until golden brown. Flip them midway.


3. While the fries are in the oven, crush or finely dice the garlic and parsley. Combine them and give them a final chop so the flavors can merge.

4. Once the fries are golden and crispy, remove them from the oven. Toss them in a heatproof bowl. Add the garlic herb mixture and a sprinkle of salt, pepper, and paprika. Give everything a good toss, and voila! A simple yet delicious way to jazz up fries!
