I might be biased because navy beans are my favorite beans but I can guarantee that this quick and easy 2-step roasted garlic and miso Bean spread will become a new staple in your house too! I had 1 sad garlic bulb laying in my pantry that was clearly counting its days, and I wanted a recipe that used a whole bulb. Then I realized I had a cup of cooked navy beans in the fridge remaining from a previous recipe. So bam! Put the two together and you get a velvety, garlicky, and umami spread. The miso is also a star in this recipe, but if you didn’t have it on hand, you can opt for salt or a bit of soy sauce. Taste as you go so you can get your desired taste. This recipe is also great for meal prep, especially if you find yourself looking for a healthy and quick lunch throughout the week. It doesn’t have raw garlic in it so it won’t get overwhelmingly garlic after a few days.
If you want to use this spread in a sandwich, prepare the sandwich ingredients while the garlic is roasting. I pickled a small red onion with 3 tbsp of vinegar, salt, black pepper, thyme, and sumac. I also sliced some tomato, bell pepper, and spinach.
